Banana Cake




After I post my Tape Cake recipe, lot of my friends are interesting to try to make it. Unfortunately, not every place have Tape in their area. I found out Tape origin is from Sundanese people, West Java. They have Sundanese language for it, that is peuyeum.

I feel bad for my friends that can not try the deliciousness of the cake. But, don't worry. Today I decided to post how to make that cake, instead use Tape, we use Banana. You can find banana in everywhere and banana is always in season.. I guarantee the cake is as good as Bolu Tape..

So, my dear friends, put your apron on you.., and turn on the oven! ;-D

Banana Cake

Ingredients :
250 gram Ripe Banana ( mashed)
250 gram Butter (melted)
200 gram All-Purpose Flour (shifted)
3 Tbs Condensed Milk
12 Pcs Eggs ( Use only : 8 white eggs and 12 eggs yolk)
250 gram Sugar
1 tsp Vanilla

Directions:
- Preheat Oven at 350 F (170C).
- Beat eggs and sugar use electric beater (mixer) in high speed.
- Add mashed banana, condensed milk and vanilla, still use mixer in high speed.
- When all mixture are well combined, stop the mixer.
- Fold with flour slowly.
- Pour very slowly the melted butter into batter and mix well.
- Bake in greased and floured pan at 350 F (170 C) for 40 - 45 minutes or until skewer come out clean.
- It is good when serve warm.

* Tip : you can bake with your favorite cup cakes paper, so you don't need to cut the cake.
Cup cakes paper now has a lot of variety in store. You can find them with lot of models and colors. Bake with cup cakes paper need only around 20 minutes, test with toothpick.

Bolu Tape / Tape Cake





Since this cake is our family favorite dessert, I made this cake for us to enjoy today. Tape is made from fermented Cassava or Yuca (When I lived in Pennsylvania, they know it as Yuca). Probably, Tape only can find in Indonesia. It is a sweet or sour alcoholic and can be used directly as a food or in traditional recipes.
The texture is soft and moist. Tape also has a special smell come from the yeasts that call "Ragi".
When you make Tape into cake, it's come delicious. That's why lot of people like it.
Since this is Indonesian traditional cake, we use a lot of eggs, typical Indonesian when they make a cake. Don't count your calorie when you enjoy this cake, don't worry about that!
Bolu Tape is just delicious !

Bolu Tape ( Tape Cake)

Ingredients :
150 gram Tape ( mashed)
250 gram Butter (melted)
200 gram All-Purpose Flour (shifted)

- Bake in greased and floured pan at 350 F (170 C) for 40 - 45 minutes or until skewer come out clean.
- It is really good when serve warm.
- Finish cake in 1 day or refrigerate left over.

Traditional Apple Pie


It has been a long time, we not eat Pie. We always can find pie easily when we lived in States. Lot of American can describe themselves as a pie people or a cake people since cake and pie are competitive. I love both !

Today is a special day, my lovely husband is birthday. I already made an Indonesian cake for him, but when my brother came to visit, we talked about our old memories, our favorite pie. Just like that, he encouraged me to make a pie. He said it's been a long time he has not eaten pie.

We have apples in our fridge, so why I am not make another dessert for this special day and also for my only brother.

It was a challenge for me to start, since I need to make the pie crust from scratch. We can not buy ready pie crust here in Indonesia. Imagine the warm apple pie with flaky crust is just make me quick to start.

Two hours later, we already enjoy Traditional Apple Pie that I made. I and my brother had 2 slices. As we enjoyed our pie, all of good memories in United States come to our mind. Even my mum said, enjoy this apple pie is really remind her when she traveled to USA.

I just smile and feel very happy with I made for people that I love...

Crust
Pie
* recipee from my friend : Erin Markel, PA

Ingredients :
* 1 1/3 cup All-purpose flour
* 1/2 cup Vegetable shortening ( I used Crisco)
* 1/2 tsp Salt
* 3 Tsp Ice water

Directions :
- Mix flour and salt in mixing bowl
- Cut shortening into the flour with a pastry cutter or fork until mixture resembles texture of tiny split peas. ( do not mix with hands, this melts the shortening & make the dough heavier)
- Add ice water and combine with fork.
- Gather into a ball and flatten in four inch wide disk
- Wrap in plastic wrap and refrigerate at least 30 minutes.
- Remove from fridge and let stand until cool but malleable.
- Using floured rolling pin, roll disk into 12 inch circle on floured surface.
- When the dough is thin but still thick enough to hold together, pick it up and move it into the pie pan.
- Run a knife along the edge of the pie pan to cut off extra crust.
- Make for 9 inch crust.


Traditional Apple Pie

Ingredients :
* 1 recipe For a 9 inch crust pie
* 1/2 cup Unsalted butter
* 3 Tbs All-purpose flour
* 1/2 tsp Lime Juice
* 1/4 cup Water
* 1/2 cup White sugar
* 1/2 cup Packed brown sugar
* 1/4 tsp Nutmeg
* 5 - 6 Apples Peeled, cored and sliced
* 1/2 Tbs Cinnamon

Directions :
- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, lemon juice, nutmeg, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly.
- Gently pour the sugar and butter liquid over the apples. Pour slowly.
- Sprinkle with cinnamon.
- Bake 15 minutes in the preheated oven.
- Reduce the temperature to 350 degrees F (175 degrees C).
- Continue baking for 35 to 45 minutes, until apples are soft.
- Serve warm
